Cruise ship cabin stewards — how much do they actually know about us?

Random thought that hit me on my last cruise: our cabin steward always seemed to know exactly when we left the room, had our towel animals ready at the perfect time, and once left extra chocolates on the pillow after overhearing that it was my birthday at dinner.

How much info do these guys actually get about guests? Do they have access to our profiles? Is there a system that tells them preferences? Or are they just incredibly observant?

I asked our steward once and he just smiled and said 'we pay attention.' Which honestly made it more mysterious.

Anyone who's worked on a cruise ship or has insight into this?
